For as long as I can remember our Dad made his famous “Mickey Waffles” for every holiday and special occasion breakfast! These waffles were always made in our ancient Mickey waffle maker, which just made it that much more special. The Christmas before Lucy was born I asked for a Mickey waffle maker so I could carry on Pop’s famous waffles in my house!
Ingredients:
• 1 3/4 cups all-purpose flour
• 1 tbsp baking powder
• 2 egg yolks
• 1 3/4 cups milk
• 1/2 cup melted butter
• 2 egg whites
• 1/2 tsp salt
Recipe:
• Plug in waffle maker to preheat.
• In a large bowl stir together flour, baking powder, and salt.
• In separate bowl, beat egg yolks with a fork. Beat in milk and butter.
• Add liquid mixture to dry ingredient bowl. Stir until mixture is blended, but still a bit lumpy.
• In another bowl beat egg whites until peaks form using an electric mixer (I use a hand mixer). Then, gently fold in egg whites to flour-milk mixture.
• Grease waffle maker with cooking spray.
• Pour in desired amount of waffle batter into maker.
• Enjoy!
